Istanbul Food Safety Congress to Examine Digital Transformation and Artificial Intelligence

The Food Safety Association and the International Association for Food Protection will host the 9th International Food Safety Congress in Istanbul on November 5–6, 2026, examining how artificial intelligence and emerging digital monitoring tools are transforming consumer food safety from production to dining tables.

Digital Tools and Consumer Protection

Organized under the theme “Access to Safe Food: Everyone’s Right, Everyone’s Responsibility,” the gathering at Istanbul Grand Cevahir Hotel will bring together domestic and international scientists, public officials, and industry specialists. Discussions will explore the practical applications of real-time monitoring across processing, storage, and supply networks to identify contamination or delivery bottlenecks before products reach households.

Advanced methods such as lab-on-a-chip testing and digital food fingerprinting are creating modern avenues to verify authenticity and combat food adulteration. By maintaining detailed digital records from farm to fork, food suppliers can detect non-compliant items more swiftly and intervene before public health is compromised.

Evaluating Technological Capabilities and Potential Risks

The conference agenda also highlights autonomous agentic artificial intelligence systems designed to coordinate tasks and assist with continuous regulatory compliance. While algorithmic evaluation aids decision-making, experts at the summit will emphasize that digital tools must supplement rather than replace human scientific oversight to avoid over-reliance and incorrect data interpretation.

Established in 2004 as the country’s first non-governmental organization dedicated to the field, the Food Safety Association works across sectors to foster stakeholder collaboration. The organization focuses on promoting public awareness, encouraging consumers to demand safer standards, and uniting businesses under shared safety protocols.
